Sourdough School for Beginners is an intimate sourdough learning experience here in my home desert kitchen in East Mesa, Arizona. In class, you will discover all there is to know about maintaining a healthy robust organic sourdough starter and crafting a beautiful loaf of organic sourdough bread.
Here in my 1960's desert home sourdough kitchen & microbakery, we will talk through the entire sourdough baking process step by step by getting your hands into the dough and learning the process of baking a beautiful loaf of organic sourdough on my 8 foot family table.
The course is broken into two lessons. The first 60-90 mins of class (Part1) is solely dedicated to learning everything you need to know about maintaining a robust and healthy sourdough starter. We will talk about environment, what it does, what to look for, ratios and general care. You will even get to feed your own that you take home with you in a brand new mason jar. We will talk about alternative ways to keep it thriving if you work full time too!
The last 3-3.5 hours of the class (Part 2) is all about diving into my Desert Organic Sourdough recipe from start to finish. I do also include my Ancient Einkorn Sourdough recipe in your take home sourdough guide. We will begin by prepping your own dough, learning about ingredients, how to manipulate your dough, how fermentation works and finally, how to shape your sourdough into your banneton baskets. I do prepare a processed sourdough dough for each attendee to learn how to shape and score a loaf to put right into the oven while we enjoy some sourdough that I made fresh that morning at our Sourdough Bar. You will also receive a detailed printed recipe guide with tips, tricks and recipes, a dehydrated organic sourdough starter to use as a backup or gift to a loved one and a step-by-step instruction guide on how to reactivate it. The class will also include a link guide on Amazon and your own lame blades to take home for scoring your loaves and yummy sourdough!
The course is designed to be interactive and hands on and will last around 4-4.5 hours from start to finish, depending on group size. It is encouraged that you bring your favorite apron and a notebook for jotting down notes if that is your learning style. You will also need to bring your favorite kitchen mixing bowl for easy transport of your sourdough dough you start in class to take home with you.
The best vessel for sourdough baking is a cast iron Dutch oven so I do recommend ordering a 3.5, 5 or 6 qt cast iron Dutch oven in advance. You do not need to bring one to class,
I will have everything you need to bake while in class. Just your apron and medium bowl!
This course is a great opportunity for you to bring back the connection we have lost in our food making practices, while also learning a new skill with your community and bringing wonderful flavor to your daily dishes. With just three simple, affordable and nutritional ingredients, you can bring this old-world skill back into your daily life whether you work full time, remotely or anything in between. No experience necessary, just a willingness to learn and have some fun!

There is a lot of time and preparation that goes into hosting these courses so I do ask for at least a 2 week cancellation notice to receive a full refund. This is due to the loss of the class seat that I will be unable to fill and any materials that have been purchased in advance for you. Once you have registered, I send a personal welcome message with all of my direct contact information.
